Ingredients:

For the base:

  • 220g digestive biscuits
  • 100g zucchero di canna
  • 100g melted butter

 

Mix ingredients together (I used the mixer to crumble the biscuits and sugar) and press into a tin.  

Place in fridge for about 2 hours.

 

For the filling:

  • 220g Philadelphia cheese
  • 120g double cream (I used 250ml di panna fresca – at least I think it was that, the small carton)
  • 100g zucchero di canna
  • Strawberry Jam (one jar) – or any other flavour of jam, or fresh fruit.


Mix sugar and cheese until fluffy.  

Add cream.  Mix well.  Place on top of biscuit base.

Cover with jam, or fruit.


Leave in fridge for at least 2 hours.

The recipe was given to me by a friend who got it from a professional cook in England.
